Caught by Surprise – Whipped Cream!

Oh, goodness. I had it in my mind that this Tuesday with Dorie was a bye week (they were following the Seahawks schedule right?) But my handy computer reminded me that it’s a pick your own recipe (from either Baking Chez Moi or Baking with Julia) week with the Doristas. Which means this is a great opportunity for those of us who have either missed a recipe in the line up or want to make something fun that’s not on the schedule.
I was on top of it at the beginning of our holiday celebrations but this one snuck up on me. Not to worry; Doire’s books have a fantastic variety of delectable choices to pick from but my timing was the limiting factor. We already had a spiced ginger birthday cake in the works for tonight. So what goes well with cake? Whipped cream of course!

It just so happened that Eva is the new bright eyed owner of a whipped cream maker and she happily agreed to test it out and help me with my post ;0) I know it was a hardship for her since she tries to make whipped cream everyday, now with her specialized kitchen tool she will have on-demand whipped cream! I guess Santa knows best.

I showed Eva the whipped cream recipe on page 439 in the Baking Chez Moi book and she was proud to say that that is how she makes it regularly.
Since we were in Seattle we took advantage of using fresh Jersey Cream. In the pantry we found a much loved gift we had given a while back: our hand crafted vanilla extract. So, we added the optional teaspoon to enhance our whipped cream. Knowing that Eva is a pro at this, she said her next step would be to put a metal bowl and wire whips into the freezer for a few minutes to chill. However, now that she can make it in her new device she was able to skip the wait.

Whipped Cream Maker

Lickity-split, we’ve got some incredibly delicious whipped cream sans the hand mixer work. This makes for one giddy, giggly girl who has just had a few large spoonfuls. I am sure you can only imagine that the pressurized canister also makes it super easy to just squirt some into your mouth, but of course we wouldn’t do anything like that!

Tuesdays with Dorie Greenspan and Baking Chez Moi is an open group dedicated to baking through Dorie’s latest books. To see what the rest of the Dorista’s are up to this week check it out here.

Wishing you a wonderful New Year!
